Why Full-Grain Outperforms Everything Else at the Pit
Canvas and synthetic aprons have one advantage: they're cheap. That's it. They scorch at high heat, soak up grease and hold the smell, and the hardware corrodes after a season outdoors. Full-grain leather does the opposite on every count.
The natural oils in full-grain cowhide make it inherently grease-resistant — spatter beads rather than soaking in. It doesn't ignite from brief flame contact. After a heavy session, wipe down grease with a dry cloth while the leather is still warm — it comes off easier before it sets. Re-condition with neatsfoot oil every few months, more if you cook outdoors frequently. The leather will darken and stiffen slightly over time — that's correct. It's building character, not wearing out.
